This gluten-free cheesy chewy is super simple and fun!

Brazilian cheese bread, or pan de queijo, is so simple, versatile, yet so good. You can add whatever cheese, spice, or herb you want, and the batter can be made in large batches and stored in the refrigerator for up to a week!

Ingredients

* 1 1/8 cup tapioca flour
* 1/4 cup oil
* 1/3 cup milk
* 1/2tsp salt
* 1/2 cup cheese (mozzarella and/or parmigiano)
* 1 large egg
* garlic and/or any spices you like!

1. Simmer the milk and oil on the stove

2. Pour and stir in the tapioca flour. Take the mixture off the stove and let it sit for 5 minutes

3. Toss in the cheese and stir

4. Add one large beaten egg

5. Scoop and roll the dough into balls. If the dough is too wet, add more tapioca flour

6. Bake in the oven at 400F for 20 minutes or until golden
