graduation cake rolls

Congrats again to all 2020 graduates! Nearly two months after school ended, I finally got my diploma and honors cords in the mail this week! you think!
To celebrate, I’ve been making these college cake rolls. My favorite so far is the expresso cake recipe below! This soft, moist cake balanced by bitter and sweet flavors has always been a successful crowd pleaser!
For the cake roll decor, I use equal amounts of unsalted butter, egg whites, sugar, and flour. I then dye this mixture with the appropriate colors and transfer them into piping bags. For convenience, I use ziplock bags and cut off a small corner to pipe with. On parchment paper, I draw out the mirrored version of the design I want. The simpler the design, the easier it is!

After I pipe out my design, I stick it in the freezer to allow it to harden. As I wait, I prepare my cake batter. When the cake batter is done, pour it over the frozen, mirrored decor and bake it in the oven.
When the cake is ready, immediately roll it up, starting from the opposite side of the decor. Wait for it to chill to room temperature before you carefully unwrap the cake roll to add in your filling.
Ingredients
Cake Decor
* 2 tablespoon unsalted butter
* 2 tablespoon sugar
* 2 tablespoon egg white
* 2 tablespoon flour
* food coloring
Cake
* 4 egg whites
* 1/4 cup hot water
* 1 tbsp instant coffee
* 4 egg yolk
* 1/4 cup oil
* 1 cup flour
* 1/2 cup sugar
* 1/2 tbsp baking powder
* 1/2 tsp salt
Cream
* 1 cup heavy whipping cream
* 1/2 cup powdered sugar
* 1 tbsp instant coffee
* 1/2 teaspoon hot water
Cake Decor
1. Combine equal amounts of butter, sugar, egg white, and butter.
2. Divide the batter and add food coloring according to your design of interest.
3. Transfer each batter color into separate bags for piping. If the batter is too soft, set it in the fridge for 10 minutes.
4. Line a pan with parchment paper. On the parchment paper, start piping out a MIRRORED version of your design. If you can't free-hand, it also helps to print out a logo!
5. Set the pan in the freezer so the design can harden and set.
Cake
1. Beat egg whites until peaks form when you lift the mixer. Set this aside
2. Mix hot water with instant coffee. Set this aside
3. In a bowl, combine the 4 egg yolks, oil, water, and coffee.
4. In another bowl, combine the dry ingredients - flour, sugar, baking powder, and salt
5. Add the dry ingredients to the egg yolk mixture
6. Gently fold in the egg whites
7. Pour the cake batter over the frozen cake decor
8. Bake at 325F for 12 minutes or until a toothpick comes out clean
Cream
1. While the cake is baking, prepare your cream filling. Beat heavy whipping cream until stiff peaks form, but be careful not to over-beat
2. Melt instant coffee in as little liquid was possible. Add this in and mix.
3. Slowly fold in the sugar.
Cake Assembly
1. Once the cake is done, pull it out of the oven and carefully roll it from the opposite side of your design (see above figure). Roll slowly to avoid cracks!
2. Let the cake cool to at least room temperature
3. Slowly unwrap the cake and put the coffee cream in. Roll the cake back up
4. Set it in the fridge for at least an hour
5. Enjoy and congrats again!
