Buttery cookies with dark chocolate ganache.
I used these Erlenmeyer flask cookie cutters for the first time 3 years ago for my lab at a summer internship at MD Anderson Cancer Center. I lived on a ranch and didn’t have much to use, so I didn’t decorate the cookies. Turns out, that was a bad idea and I never touched these cookie cutters again until today to make these ganache cookie sandwiches. You can use any cookie cutter!
Ingredients
Cookie
* 12 tablespoons butter
* 1/2 cup powdered sugar
* 1 egg
* 2 cups flour
* 1/2 teaspoon salt
Ganache
* 1 cup chopped chocolate
* 1/2 cup heavy cream
1. Mix flour, sugar, and salt. Then add room temperature butter. Stir the mixture until crumbly and add in a beaten egg. Wrap this dough in plastic and let it rest in the fridge for 15 minutes
2. Preheat the oven to 340F. Roll the dough flat and cut out your cookies. Places the cookies onto parchment paper and bake them for 20 minutes or until light brown.
3. In the meantime, prepare your ganache. Heat up the cream until it is barely boiling. Pour the hot cream over chopped up chocolate and allow the hot cream to melt the chocolate. Then stir until creamy and transfer the ganache into a piping bag. Chill for 10 minutes.
4. Pipe your filling onto the back of half the shells. Form a sandwich and repeat.
